Like kale? Love avocado? Well it goes without saying, that our Kale Guacamole Recipe is for you. The addition of kale is a great way to add texture & a boost of nutrients to your guacamole. Enjoy on toast, on tacos, or with tortilla chips.

How many of you have trouble finding the perfect avocado? There are a couple tricks that I use to try and get the perfect little green guy each time. First, I begin by looking at the color of the exterior of the avocado. The deeper green is usually a more ripe avocado. Second, you can feel the firmness of the avocado. You don’t want one that is super mushy but you don’t want one that is too firm either. Try to find one that is just slightly soft to the touch. And my for my final trick, I pop off the brown stem of the avocado to see the color inside. Usually, if the tip comes off easily and has a nice shade of green, that can indicate the ripeness of the avocado.
The kale falls into the category of dark green leafy vegetables – and if you have heard about these at all, you know that they are loaded with nutrients. Kale is a powerhouse full of vitamin K, A, and C, folate, B vitamins, copper, manganese, and fiber. Just one cup of kale provides your daily value for vitamin A and vitamin C for the day.
To make the guac, scoop the avocado into a bowl. Add jalapeño, onions, kale, and cilantro to the bowl. Mash it up. Squeeze lime juice into the bowl and add salt, to taste. Mash again, and enjoy! That’s it- 3 easy steps.

- 1 ripe avocado
- 1/2 jalapeño, deseeded & chopped
- 2 tablespoons red onion chopped
- 1/4 cup kale, very finely chopped
- 2 tablespoons cilantro
- Juice of 1 lime
- Salt, to taste
