Refreshing Cucumber Mango Margarita

Poolside chillin? Then this Refreshing Cucumber Mango Margarita is right up your alley.  Who doesn’t like a cool drink on a hot summer day or after a long day? Sometimes that’s all you really need.  Whatever the case, try pairing this drink with one of our many recipes that go nicely with a side of tequila.  Try our Roasted Cauliflower Tacos, or our Pepperjack Protein Tacos, or our Quinoa Enchilada Dip!

Many margaritas are loaded with sugar. Making your own margarita allows you to control what goes into your drink.  This recipe is a healthier (and I think, a more delicious) alternative. The cucumber and mango provides an excellent, crisp flavor that beats all those pre-mixes!

Ever wanted to bartend? Now’s your chance! Peel the cucumber and mango, and slice into thick pieces. Blend the ice, cucumber, mango, lime juice, maple syrup, and tequila. Serve and enjoy!

Servings: 2 drinks
  • 1/2 cucumber
  • 1/2 small mango
  • 8 ice cubes
  • 1 tablespoon maple syrup
  • Juice of 1 lime
  • 3 ounces tequila
  1. Peel the cucumber and mango, and slice into thick pieces
  2. Blend the ice, cucumber, mango, maple syrup, lime juice, and tequila

  3. Serve and enjoy!
