2019 Thanksgiving Sides Roundup

Stuffed peppers anyone??️ ?️ ⁠ I made this recipe for my lunch this week and bae tried to steal it from me (him: "is that all for you"? Me: "yes, go away"….LOL JK I gave him a bite ?). Am I the only one with a partner who is always trying to eat their food!?⁠⠀ ⁠⠀ I love this recipe because YOU helped me create it. A couple of weeks ago in IG stories, I asked you to vote between a series of ingredients (remember that?) and this is the final product you came up with. ⁠⠀ ⁠⠀ Trust me, the whole family will love this one (so will you because it's ready in 1, 2, 3). Here's what you need and what you do:⁠⠀ ⁠⠀ Ingredients:⁠⠀ 3 tablespoons sun-dried tomato pesto⁠⠀ 2 tablespoons olive oil⁠⠀ 1 can of white beans⁠⠀ 2 cups of cooked rice (any will do)⁠⠀ 3 bell peppers (choose whatever colors you like)⁠⠀ 1 can of diced tomatoes⁠⠀ Parmesan cheese OR nutritional yeast for a vegan version⁠⠀ ⁠⠀ Directions:⁠⠀ ?️ Chop peppers in half, de-seed and drizzle with olive oil, then sprinkle with salt and pepper, place in a baking sheet⁠⠀ ?️ Cook at 350F for 25-30 minutes⁠⠀ ?️ While peppers are cooking, cook rice according to package directions (I added veggie broth and olive oil for extra flavor)⁠⠀ ?️ Once the rice is done cooking, mix in beans, tomatoes, and pesto.⁠⠀ ?️ Stuff peppers w/ mixture, then add cheese or nutritional yeast, any herbs, salt, pepper and spices.⁠⠀ ⁠⠀ Enjoy! ⠀ ⠀ ?- Jess

YES OR NO…Are you here for Cauliflower Steaks? Not gonna lie, when I first heard about this trend I was like ???…BUT, after this recipe I was 100% sold. #ad ⠀ ⠀ To make, all you do is slice the cauliflower length wise, drizzle some EVOO and spices (we used salt, pepper and paprika) and roast @ 450F for 25 mins. ⠀ ⠀ We topped this batch off with Tomato & Ricotta Pesto (drooling just thinking about it). This recipe so good and E.A.SY. Make a meal out of it by serving with a protein + some carbs ? For the tomato ricotta pesto, pulse the below until consistent ? 1/2 cup sun-dried tomatoes in oil 1/4 cup ricotta 1/4 cup parmesan 2 tablespoons walnuts 1/4 cup extra virgin olive oil 1/4 teaspoon ground oregano 2 garlic cloves, chopped 1/2 teaspoon salt ⠀ #cauliflower #cauliflowersteak #plantbased #mealprep #dietitian

10. Savory Roasted Broccoli

Do you find it difficult to eat enough vegetables? ??‍♀️ SAY NO MORE. Enter this perfectly crunchy, roasted broccoli that anybody can master. ? #ad Whenever I cook this as part of my meal prep, I always eat it all the SAME DAY because….it’s THAT good. ⠀ —-⠀ Here are the steps:⠀ ⠀ 1.) Chop a head of broccoli into florets⠀ 2.) Mix with 1-2 tablespoons of olive oil⠀ 3.) Add salt, crushed red pepper flakes, and nutritional yeast OR parmesan cheese to taste⠀ 4.) Bake @ 400F for about 20 minutes (or until the broccoli turns a rich green color and the edges are crispy).⠀ —-⠀ What about you?
