Sheet Pan Spicy Green Beans & Tofu

    Main Courses

This week we’re bringing you this simple Sheet Pan Spicy Green Beans & Tofu recipe, because who has time for laborious meals?

Sheet pan recipes are all the rage right now. And for good reason. We love them because you literally throw a whole bunch of stuff together on one big pan and you’re all set. The clean up is reduced to just your knives, cutting board, and pan. Who doesn’t want that? They’re also super convenient for when you’re balancing work, dinner, family, & life. Just pop that one pan in the oven and no need to worry about different cooking times, water boiling over while your vegetables are burning, and the timer incessantly going off in the background.

Green beans are also perfectly in season in September. You’ll for sure be able to pick up at your local farmers market this weekend!

This recipe is delicious and loaded with nutrition. Green beans are a great source of vitamins C & K, and are a good source of fiber. Plus the addition of tofu adds some plant-based protein for a satiating meal. We recommend pairing this dish with a serving of rice noodles or brown rice, for a complete and balanced meal!

We’ve spent enough time talking…now let’s get to cooking. Preheat the oven to 450F. Press the tofu to remove most of the water, and cut into 1” chunks. Add to a bowl with the rest of the ingredients for the tofu, and gently mix in with your hands so all tofu pieces are coated. Set aside. In a parchment paper lined baking dish, add the string beans, and drizzle the coconut oil and tamari over the beans. Then add the rest of the ingredients for the beans to the baking dish. Use your hands to massage the green beans with the rest of the ingredients. Add the marinated tofu to the baking dish with the green beans, and bake for 10 minutes. Flip and bake for another 7 minutes. Enjoy!

We love recipes like this that help cut down on prep and dish washing time, without sacrificing a hearty, nutritious meal. This Sheet Pan Spicy Green Beans & Tofu recipe goes great with whatever grains you have on hand. Do you love sheet pan recipes as much as we do? What are your favorites? Why do you need nutritional yeast? Other than for nutrition. Will it taste the same without? Thanks

I’ve made this a buuuuunch of times and it never gets boring. I double the tofu for leftovers and it’s still pretty crispy reheating in the microwave. Thank you for this great recipe!

A few years back, I was looking for a green bean recipe for Thanksgiving. I decided to make this without the tofu and only do green beans. People loved it, and asked for the recipe. It’s been a staple since then!
      Such a crowd pleaser!

Crispy on the outside, oozy on the inside, we are Crispy on the outside, oozy on the inside, we are using @cabotcheese seriously sharp cheddar to make these bolitas de yuca for your superbowl turn up! A mouthwatering Dominican appetizer made with my favorite root vegetable, these bolitas feed a crowd and pair perfectly with Cabot cheddar, which is naturally aged and 100% lactose free. See below for the full recipe! #cabotcreamery

Ingredients
🧀 1 pound yuca, peeled and chopped into small chunks
Salt
🧀1 tablespoon butter
🧀1/2 jalapeño, seeded and finely chopped
🧀1/4 teaspoon of garlic
🧀1/4 teaspoon of paprika
🧀4 ounces of Cabot Seriously Sharp Cheddar Cheese, cut into small 1/2” chunks

Directions:
🧀Preheat the oven to 450F.
🧀Bring a medium pot of salted water to boil and add the yuca. Boil for 30 minutes or until tender. Drain the yuca, remove all of the fibrous stems and add to a medium sized bowl.
🧀Mash the yuca well with butter, jalapeño and spices until completely smooth. Adjust for salt and set aside until cooled.
🧀Grab about 1 1/2 tablespoons of the yuca mix, put the cheddar cheese in the center and roll it up into a ball. Repeat for the remaining yuca and cheese.
🧀Add the yuca balls onto a parchment paper lined baking sheet OR air fryer and spray with oil. Bake for 25 minutes (or air fry for 10-12 minutes) until crispy and browned on the outside. Enjoy on their own or with your favorite sauce!

TIPS:
👉🏽If the balls are extra sticky, wash and dry your hands throughout the rolling process - this will help.
👉🏽If your yuca mash is bulky, add a little bit of water while mashing to make it smoother.
Ya’ll, let’s normalize checking in on people w Ya’ll, let’s normalize checking in on people when we see them versus commenting on their bodies. It’s just not it. Over the holidays, I had to check several family members about this. For many including myself, it’s awkward, uncomfortable and even if well-intentioned, it can be triggering for people. And you just never know what’s going on (maybe they’re sick, maybe they’re on medication, maybe they’re pregnant and don’t want you in their business)

What are some other ones you’ve been told? The latest on my roster has been “damn that ass is fat” 🤣 (can’t make this up)
