    Ensalada de Coditos Dominicana (Dominican Macaroni Salad)

    A colorful and hearty summer salad, ensalada de coditos can be customized with ingredients like peas, tuna or ham. This vegetarian version features raw vegetables for added flavor and crunch, and makes for the perfect side to your main dish.

    Ensalada de Coditos Dominicana (Dominican Macaroni Salad)

    Ingredients
    • 8 ounces whole-wheat macaroni
    • ½ cup mayonnaise
    • 1 teaspoon Dijon mustard
    • ¼ teaspoon salt
    • ¼ teaspoon cracked black pepper
    • 1 large carrot, finely chopped
    • 1 medium green bell pepper, finely chopped
    • ½ cup corn kernels, thawed if frozen
    • ½ medium red onion, finely chopped
    Instructions
    1. Bring a medium pot of water to boil. Add macaroni and cook according to package directions. Drain and rinse with cold water.
    2. Stir together mayonnaise, mustard, salt and pepper in a large bowl. Stir in the macaroni, carrot, bell pepper, corn and onion. Mix to evenly coat.

    Crispy Roasted Patatas Bravas

    Crispy roasted potatoes get transformed with a fiery paprika sauce. Patatas bravas are served in restaurants and bars throughout Spain; this version uses baked potatoes instead of fried. Use the leftover paprika sauce as a topping for veggies or mix with mayo to create a spread for a sandwich or wrap.

    Ingredients
    • 6 medium Yukon Gold potatoes, cut into bite-size pieces
    • 6 tablespoons extra-virgin olive oil, divided
    • 1 teaspoon salt, divided
    • 1 tablespoon all-purpose flour
    • 1 ½ teaspoons sweet smoked paprika
    • 1 ½ teaspoons hot smoked paprika
    • ¾ cup low-sodium vegetable broth
    • 1 teaspoon white-wine vinegar
    • 1 tablespoon fresh parsley, finely chopped
    Instructions
    1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
    2. Spread potatoes on the prepared baking sheet. Drizzle the potatoes with 2 tablespoons oil and sprinkle with 1/4 teaspoon salt; massage the oil into the potatoes. Roast, flipping once halfway, until golden and crispy, 40 to 45 minutes.
    3. Meanwhile, heat the remaining 4 tablespoons oil in a small saucepan over low heat. Increase heat to medium-high; whisk in flour, sweet paprika, hot paprika and the remaining 3/4 teaspoon salt until smooth, about 1 minute. Whisk in broth and vinegar; cook, whisking frequently, until the sauce thickens to a consistency that's good for drizzling, 4 to 5 minutes. Set aside.
    4. Transfer the potatoes to a serving dish. Drizzle with 2 tablespoons sauce (reserve the remaining sauce for another use) and sprinkle with parsley.

    Frozen Mocha

    Freezing the soymilk into cubes helps chill the beverage without diluting its flavor. Maple syrup and vanilla extract provide sweetness to balance the bitterness of the coffee in this refreshing drink.

    Ingredients
    • 2 cups soymilk, unsweetened plain
    • 1 cup strong brewed coffee, cooled
    • 2 tablespoons cocoa powder, unsweetened
    • 1 ½ tablespoons pure maple syrup
    • ¼ teaspoon vanilla extract
    • Chocolate syrup for garnish
    Instructions
    1. Pour soymilk into ice cube trays and freeze for at least 4 hours or overnight.
    2. Add coffee, cocoa, maple syrup and vanilla to a high-speed blender. Blend on High until combined, about 30 seconds. Add the frozen soymilk cubes; blend on High until smooth, about 30 seconds. Drizzle chocolate syrup along inside edge of glasses, if desired. Divide between 2 glasses and serve immediately.

    Skillet Lemon-Pepper Salmon

    Simple ingredients like lemon, cracked black pepper and paprika completely awaken this fall-apart-tender salmon with a crispy exterior. Use this salmon to add protein to a grain bowl or salad, or enjoy alongside roasted veggies.

    Skillet Lemon-Pepper Salmon

    Ingredients
    • 4 (5-6 oz) skin-on salmon fillets, preferably wild Alaskan
    • 1 teaspoon cracked black pepper
    • ½ teaspoon paprika
    • ½ teaspoon garlic powder
    • ½ teaspoon salt
    • 1 teaspoon lemon zest, grated
    • 2 tablespoons lemon juice, divided
    • 1 tablespoon extra-virgin olive oil
    • 2 tablespoons fresh parsley, finely chopped
    • Pinch of flaky sea salt
    Instructions
    1. Pat salmon dry and place, skin-side down, in a medium bowl. Sprinkle with pepper, paprika, garlic powder, 1/2 teaspoon salt and 1 tablespoon lemon juice.
    2. Heat oil in a large nonstick pan over medium-high heat until shimmering. Add the salmon, skin-side down; cook until the skin releases from the pan easily and the edges are opaque, about 4 minutes. Reduce heat to low and flip the salmon. Continue cooking until an instant-read thermometer inserted in the thickest part of the salmon registers 145°F, 3 to 5 minutes .
    3. Sprinkle the salmon with the remaining 1 tablespoon lemon juice, lemon zest, parsley and flaky salt.

I (Jess) have been obsessed with this concept for YEARS and have been searching for the right guest to dive in. Welp, we’ve found her! ​​Our podcast guest this week, Dacy Gillespie @mindfulcloset, is a personal stylist who intuitively guides her clients to discover what they feel best in. She helps them let go of the external messages they’ve been given about what they should wear and get to the heart of what’s making them uncomfortable about their clothes.
