    Garlicky Tuscan Kale with Savory Chickpeas

    Where my anochvy lovers at?! ? ?  I had some left in the tin and didn’t want them to go to waste so whipped up another favorite of mine…tuscan kale with savory chickpeas, anchovs & Parmesan.

    I eat this when I want something more than a snack but I’m not quite ready for a full meal. Super savory and quick to prep, and can be added as a side to main dishes too! Recipe below. Enjoy <3

    Garlicky Tuscan Kale with Savory Chickpeas
    Servings: 2
    Ingredients
    • 1 tablespoon oil⠀
    • 1/4 onion, sliced ⠀
    • 2 garlic cloves, minced ⠀
    • 4 anchovies packed in oil ⠀
    • 1 cup cooked chickpeas⠀
    • 1/2 teaspoon paprika ⠀
    • 3 cups tuscan kale, chopped ⠀
    • optional: grated Parmesan ⠀
    • salt & pepper to taste
    Instructions
    1. In a pan, heat the oil and sauté the onion, garlic and anchovies (add anchovy oil too!) for 1-2 minutes.
    2. With a large spoon, break apart the anchovies into smaller pieces as it sautés.
    3. Add the chickpeas and paprika, and sauté for another couple of minutes until chickpeas are golden and browned.
    4. Add the kale and sauté another couple of minutes until slightly wilted.

    5. Top with Parmesan, salt and pepper to taste and enjoy!! ⠀

Dr. Harvey is a leader within the field of Public and Mental Health. She is a researcher with over 15 years of experience ranging from biological and chemical warfare agent testing for the Department of Defense, to understanding the neurobiological mechanisms that control social stress.

    Our Latest Snack Obsession

    Some people can get through the day without snacks. And then there’s the rest of us. Hunger pangs are never fun and snacks are a great way to get from one meal to the next when you’re not quite ready for a full meal. Cheese and crackers is one of my go-to snacks because…cheese. It’s one of my favorite foods, and is incredibly easy to incorporate. If you’ve been looking to up your snack game, this one is for you!
