Where my anochvy lovers at?! ? ? I had some left in the tin and didn’t want them to go to waste so whipped up another favorite of mine…tuscan kale with savory chickpeas, anchovs & Parmesan.
I eat this when I want something more than a snack but I’m not quite ready for a full meal. Super savory and quick to prep, and can be added as a side to main dishes too! Recipe below. Enjoy <3
Garlicky Tuscan Kale with Savory Chickpeas
Servings: 2
Ingredients
- 1 tablespoon oil⠀
- 1/4 onion, sliced ⠀
- 2 garlic cloves, minced ⠀
- 4 anchovies packed in oil ⠀
- 1 cup cooked chickpeas⠀
- 1/2 teaspoon paprika ⠀
- 3 cups tuscan kale, chopped ⠀
- optional: grated Parmesan ⠀
- salt & pepper to taste
Instructions

In a pan, heat the oil and sauté the onion, garlic and anchovies (add anchovy oil too!) for 1-2 minutes.

With a large spoon, break apart the anchovies into smaller pieces as it sautés.

Add the chickpeas and paprika, and sauté for another couple of minutes until chickpeas are golden and browned.

Add the kale and sauté another couple of minutes until slightly wilted.

Top with Parmesan, salt and pepper to taste and enjoy!! ⠀
