    Roasted Garlicky Cauliflower with Glass Noodles

    This satisfying main dish features sweet potato glass noodles and roasted cauliflower tossed in a sweet and spicy sauce made with fish sauce, sambal oelek and maple syrup. If the glass noodles are too long, you can cut them in half with kitchen shears.

    Roasted Garlicky Cauliflower with Glass Noodles

    Ingredients
    • 4 cups small cauliflower florets (about 1/2 small head)
    • 2 cloves garlic, thinly sliced
    • 3 tablespoons extra-virgin olive oil, divided
    • ⅛ teaspoon salt, divided
    • 2 3.5 ounce packages sweet potato glass noodles
    • 2 tablespoons soy sauce
    • 2 tablespoons pure maple syrup
    • 1 tablespoon sesame oil
    • 2 teaspoons fish sauce
    • 1 teaspoon sambal oelek
    • 4 large eggs, lightly beaten
    • 1 scallion, thinly sliced, divided
    • 1 serrano or jalapeño pepper, seeded and finely chopped
    • ½ tablespoon sesame seeds, toasted
    • 1 tablespoon fresh cilantro, finely chopped
    Instructions
    1. Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper.
    2. Spread cauliflower and garlic on the prepared baking sheet. Drizzle with 2 tablespoons olive oil and sprinkle with a pinch of salt. Roast until the cauliflower and garlic are golden, 18 to 20 minutes.
    3. Meanwhile, bring a large pot or Dutch oven of water to a boil. Add noodles and cook until tender, 6 to 8 minutes. Drain and rinse under cold water.
    4. Meanwhile, whisk soy sauce, maple syrup, sesame oil, fish sauce and sambal oelek together in a small bowl.
    5. Heat the remaining 1 tablespoon olive oil in the large pot (or Dutch oven) over medium-low heat. Add eggs, half of the scallions, serrano (or jalapeño) and the remaining pinch of salt. Cook, stirring to scramble, until the eggs are mostly cooked through, about 1 minute.

    Cranberry-Almond Energy Balls

    These energy balls are the perfect make-ahead snack. Filled with cranberries, almonds, oats and dates, these energy balls come together in minutes. Maple syrup and tahini help bind everything together while adding a touch of sweetness and bitterness.

    Ingredients
    • ¾ cup raw whole almonds
    • ½ cup sweetened dried cranberries
    • ¼ cup pitted dates
    • ¾ cup old-fashioned rolled oats (see Recipe Notes)
    • 2 tablespoons tahini
    • 2 tablespoons fresh lemon juice
    • 1 tablespoon pure maple syrup
    Instructions
    1. Add almonds, cranberries and dates to a large food processor; process on High until the ingredients are broken into smaller pieces, 10 to 15 seconds. Add oats, tahini, lemon juice and maple syrup. Continue processing until a thick paste forms, 40 to 60 seconds. With your hands, roll the mixture into 25 balls, about 1 tablespoon per ball.
    Recipe Notes

    People with celiac disease or gluten sensitivity should use oats that are labeled "gluten-free," as oats are often cross-contaminated with wheat and barley.

    Warm Butternut Squash & Kale Salad with Goat Cheese & Pepitas

    This healthy salad makes the perfect side dish for the holidays. Butternut squash turns tender in the oven, while goat cheese and pumpkin seeds add creaminess and crunch. Letting the kale and lemon juice sit helps tenderize the leafy green, so don’t skip that step.

    Warm Butternut Squash & Kale Salad with Goat Cheese & Pepitas

    Ingredients
    • 4 cups butternut squash, cubed (3/4-inch)
    • ½ cup onion, thinly sliced
    • 1 tablespoon extra-virgin olive oil
    • 1 tablespoon pure maple syrup
    • ¼ teaspoon kosher salt
    • 1 ½ cups stemmed lacinato kale, thinly sliced
    • 1 tablespoon lemon juice
    • ⅓ cup goat cheese, crumbled
    • ¼ cup pepitas, toasted
    • ¼ teaspoon flaky sea salt
    • ⅛ teaspoon cracked black pepper
    Instructions
    1. Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper.
    2. Spread squash and onion on the prepared baking sheet. Drizzle with oil and maple syrup; sprinkle with kosher salt. Stir to coat and spread in an even layer. Roast until tender, about 20 minutes.
    3. Meanwhile, combine kale and lemon juice in a large bowl; toss to coat. Let stand while the squash is baking, allowing the kale to soften.
    4. Add the roasted vegetables to the kale; toss to combine. Top with goat cheese, pepitas, flaky salt and cracked pepper.

    Baked Garlicky Salmon Balls

    These garlic-forward salmon balls are tender and flavorful. Add them to a salad or grain bowl for a boost of protein. Or, serve them with your favorite starch and vegetables for a healthy dinner.

    Baked Garlicky Salmon Balls

    Ingredients
    • 2 6 ounce cans boneless, skinless salmon, drained
    • 3 tablespoons Italian breadcrumbs
    • 1 scallion, thinly sliced
    • 1 large egg, lightly beaten
    • 1 tablespoon plain strained yogurt, such as Greek-style
    • 1 tablespoon garlic, minced
    Instructions
    1. Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper.
    2. Combine salmon, breadcrumbs, scallion, egg, yogurt and garlic in a large bowl; stir, breaking up the salmon, until well mixed. With clean hands, roll about 1 1/2 tablespoons of the mixture into a ball; place on the prepared baking sheet. Repeat with the remaining mixture, making 18 to 20 salmon balls. Lightly coat the balls with cooking spray. Bake, flipping once, until firm and golden, about 20 minutes.
