Healthy Tropical Tostadas

Are you feeling that flavor? These Healthy Tropical Tostadas will take you straight to the beach.  They are nice and simple, fresh, and light.  The black beans will make a gorgeously smooth paste  that you will use for the bed of the rest of your ingredients and it will all be wrapped up in one little warm, corn tortilla.

tropical tortillas smallThe black beans in this recipe add protein and fiber to help keep you satiated for hours. If using canned beans, make sure you rinse them well to remove all that extra sodium. And let’s talk about mango! How mouth watering, sweet, and juicy is a perfectly ripe mango? Bonus: mangos are an excellent source of vitamins A and C and many different minerals.  The combination of mango, avocado, garlic, onion, cilantro, chili, and cumin will give you the tropical experience that will transport you straight to the coast of Mexico.

Begin by preheating the oven to 350F and baking two corn tortillas for about 5 minutes or until crispy. Next, you will heat one tablespoon of water in a small pan.  Add the black beans and then your garlic, onion, cilantro, chili, and cumin.  Stir the mixture and cook for a few minutes.  In the meantime, chop mango, avocado, and your romaine lettuce.  Mash your cooked beans with a fork and then spread the paste over both the tortillas.  Finally, top off with the rest of your ingredients.

Make these tostadas for yourself or multiply the recipe for a fun crowd pleaser. These work as a great appetizer that everyone will love or a healthy meal for you to enjoy.   1. 2 corn tortillas
  2. 1/2 cup of chopped romaine lettuce
  3. 1/2 cup of black beans
  4. 1/2 of chopped mango
  5. 1/4 chopped avocado
  6. 2 tablespoons of grated cheese
  7. Juice of 1/2 lime
  8. 1 tablespoon of chopped garlic
  9. 1 tablespoon of chopped red onion
  10. 1 tablespoon of chopped cilantro
  11. 1 tablespoon of water
  12. 1 teaspoon of chili powder
  13. 1 teaspoon of cumin
  1. Heat oven at 350F
  2. Bake tortillas for about 5 minutes or until crispy

  4. Stir and cook for a few minutes
  5. Mash cooked beans with a fork and then spread over both tortillas
  6. Add the rest of the ingredients onto both tortillas
