    Quick & Easy Veggie Pizza

    This Quick and Easy Vegetable Pizza is as quick and easy as it sounds.  It’s full of hearty vegetables that will help keep you satiated, and will add a dose of vitamins and minerals to your next meal. Did anyone say movie night? Cuddle up, and get ready to enjoy the easiest pizza ever!

    The greens in this recipe are full of vitamin A, vitamin K, manganese, folate, and other essential vitamins and minerals. 

    To prep this pizza, start by preheating the oven to 450F. While you wait on the oven, chop up your garlic and leafy greens into smaller pieces. Sauté the garlic in olive oil for 1-2 minutes, then add the greens. Sauté for another couple of minutes and set aside. Trader Joe’s has already-prepared flatbreads that are super simple to buy or if you are feeling up to it, you can make flatbreads from scratch using our recipe. Place 2 flatbreads on a parchment paper lined baking sheet. Add the tomato sauce to each flatbread, then layer on the ricotta and greens evenly over them. And for the grand finale, top with mozzarella. Bake the pizzas for 8-10 minutes or until cheese has melted and pita is browned. Remove from the oven, and sprinkle each one with garlic and fresh red pepper flakes to taste!

    QUICK AND EASY VEGETABLE PIZZA
    Servings: 2 people
    Ingredients
    • 1 tablespoon olive oil
    • 2 cloves garlic
    • 2 cups leafy greens, (kale, spinach, or chard)
    • 2 flatbreads
    • 1/4 cup tomato sauce
    • 2 tablespoons ricotta
    • 2 ounces mozzarella cheese, shredded or sliced in rounds
    Instructions
    1. Preheat the oven to 450F.

    2. In a pan, heat the olive oil and add the garlic. Sauté for 1-2 minutes, and then add the greens.

    3. Sauté for another couple of minutes and set aside. 

    4. On a parchment paper lined baking sheet, add the flatbreads, and layer with tomato sauce and ricotta.

    5. Add the greens, top with mozzarella, and bake for 8-10 minutes or until cheese has melted and pita is browned. Enjoy with your favorite toppings!

      This pizza looks so delicious! Traditionally, I make a traditional pepperoni pizza. However, I’ve been trying to limit red meat and get more greens into my system. I’m so excited to try this vegetarian pizza recipe! Thanks so much for sharing! I think that I’ll try making it this Saturday after my son’s football game.

      I thought this was a great idea! I mean, I’ll never break out of my meaty cheesy pizzas, but my wife really likes veggie stuff. I do love broccoli though, so even I would partake in some of this. I’ll have to show this to my wife, that way we can compromise on pizza night!

    LIFE UPDATE: I purchased a home in the Hudson Vall LIFE UPDATE: I purchased a home in the Hudson Valley with 5 acres of land! (Even typing that makes me anxious lolol) All reno updates will be on @bohiohomes. I’ve been wanting a home close by to retreat into nature and considered a few locations but honestly, the racial tension and lack of diversity upstate gave me mixed feelings. I actually went to school in New Paltz (and love it SO MUCH) so I’m not sure why I didn’t consider buying here sooner. I took a trip this summer to go apple picking and was like wait, New Paltz is perfect! It’s welcoming, diverse (thanks to all the city kids and professors) and there’s so many fun things to do!! It’s also just 90 minutes away from the city. 

I’ve officially moved in and will be renovating this a-frame beauty built in the early 70’s. There is SO much work to do. The home has solid bones but needs major updates and I have to condition the land. We even have a cute pond! Very scary and very exciting. Eventually, I may open it up for retreats or for people who want to disconnect from the NYC chaos. For now, it’ll be home. Follow along for renovation updates on @bohiohomes 💕💕
