    Nopales Summer Salad

    A beloved ingredient in Mexican cooking, nopal cactus can be enjoyed both cooked and raw. Here, we cook it and toss it with tomatoes and corn for an impressive summer salad that doesn’t break the bank.

    Ingredients
    • 4 medium nopales (fresh cactus leaves)
    • 1 large tomato, diced
    • ¾ cup fresh corn kernels
    • ⅓ cup crumbled queso fresco
    • 2 tablespoons finely chopped seeded jalapeño pepper
    • 2 tablespoons chopped fresh cilantro, plus more for garnish
    • 1 tablespoon extra-virgin olive oil
    • 1 tablespoon lime juice
    • ¼ teaspoon salt
    Instructions
    1. Holding nopales by the bottom, gently scrape off thorns, brown spots and ends using a sharp knife or vegetable peeler. (To protect your fingers from thorns, wear thick gloves or use a cloth.) Rinse the nopales under cold water. Cut them into long narrow strips, then cut crosswise, making 1/2-inch squares.
    2. Heat a large skillet over medium heat. Add the nopales; cook, stirring occasionally, until softened and olive green, about 5 minutes. Let cool for 10 minutes.
    3. Combine the nopales, tomato, corn, queso fresco, jalapeño, cilantro, oil, lime juice and salt in a large salad bowl and toss to coat. Top with more cilantro, if desired.

    Sweet Potato Quesadillas

    These simple yet satisfying quesadillas are layered with mashed sweet potatoes, red onion and serrano pepper. Pepper Jack cheese adds mild heat, while cumin and oregano provide earthy balance. Serve topped with plain strained yogurt and lime wedges, if desired.

    Ingredients
    • 1 ½ cups diced peeled sweet potato, 1/2-inch cubes
    • 1 teaspoon extra-virgin olive oil
    • 1 cup thinly sliced red onion
    • 1 serrano pepper, thinly sliced
    • ¼ teaspoon ground cumin
    • ¼ teaspoon dried oregano
    • ¼ teaspoon salt
    • 4, 8 inch flour tortillas
    • 1 cup shredded pepper Jack cheese
    • 1 tablespoon finely chopped fresh cilantro
    Instructions
    1. Bring a small pot of water to a boil. Add sweet potato and cook, covered, until fork-tender, about 5 minutes. Drain and mash with a pestle or potato masher until completely smooth.
    2. Meanwhile, heat oil in a large nonstick pan over medium heat. Add onion, serrano, cumin, oregano and salt; cook, stirring frequently, until the spices are fragrant and the onion is tender, 3 to 4 minutes. Transfer to a bowl. Wipe out the pan.
    3. To assemble quesadillas, spread about 1/4 cup mashed sweet potato in a thin layer on one half of each tortilla. Top with about 1 tablespoon onion mixture and 1/4 cup cheese. Fold the bare half of the tortilla over the filling.
    4. Heat the pan over medium-low heat. Cook 2 quesadillas, flipping once, until crispy and golden and the cheese has melted, 5 to 6 minutes. Repeat with the remaining quesadillas. Top with cilantro.

    • 3 tablespoons rice vinegar

    • 4 cups finely shredded green cabbage
    • 1 cup carrot ribbons
    • ⅓ cup finely chopped red onion
    • 1 serrano pepper, finely sliced
    • 2 tablespoons chopped fresh cilantro, plus more for garnish
    • 2 tablespoons toasted sesame seeds
    Instructions
    1. Whisk oil, lime juice, vinegar, maple syrup and salt together in a large bowl. Add cabbage, carrot, onion, serrano and cilantro; toss until well coated. Top with sesame seeds. Garnish with cilantro, if desired.

    Cheesy Pulled Chicken & Green Chile Quesadillas

    A fresh salsa verde pulls double duty in this quesadilla recipe. First, the chicken gets cooked in the salsa to help impart flavor and keep it moist. Then, the salsa verde gets served alongside the quesadillas for dipping. Green chiles add a touch of heat to complete the dish.

    Cheesy Pulled Chicken & Green Chile Quesadillas

    Ingredients
    • 8 cups water
    • ¾ pound tomatillos, husked (about 7 small)
    • ¼ medium white onion, cut into quarters
    • 1 serrano pepper, halved, seeded and stemmed
    • 2 tablespoons chopped fresh cilantro
    • 2 tablespoons low-sodium chicken or vegetable broth
    • 1 large clove garlic, peeled
    • ¼ teaspoon salt plus 1/8 teaspoon, divided
    • 14 ounces chicken tenders
    • ½ teaspoon ground cumin
    • ½ teaspoon dried oregano
    • 6 8 inch flour tortillas
    • 1 ¼ cups shredded pepper Jack cheese
    • 6 tablespoons canned diced green chiles
    Instructions
    1. Bring water to a boil in a covered medium pot. Add tomatillos, onion and serrano; boil, covered, for 10 minutes.

    2. Drain the vegetables and transfer to a blender. Add cilantro, broth, garlic, and 1/4 teaspoon salt; pulse until chunky, about 5 pulses (use caution when blending hot ingredients).

    3. Pat chicken dry. Sprinkle with cumin, oregano and the remaining 1/8 teaspoon salt. Return 1 cup salsa verde to the medium pot and bring to a light boil over medium-low heat (reserve the remaining salsa verde for serving). Add the chicken, stirring to coat. Cook, covered and stirring once, until the chicken is cooked through, about 8 minutes.

    4. Remove from heat and, using two forks, pull the chicken apart until completely shredded. Return to medium-low heat and continue cooking, stirring occasionally, until the sauce has thickened, 2 to 3 minutes.

    5. To assemble quesadillas, spoon 5 tablespoons pulled chicken onto one half of a tortilla. Top with 3 tablespoons cheese and 1 tablespoon chiles; fold to close. Repeat with the remaining tortillas.

    6. Heat a large nonstick pan over medium-low heat. Cook 2 or 3 quesadillas at a time, flipping once, until crispy and golden and the cheese has melted, about 6 minutes. Repeat with the remaining quesadillas. Serve with the remaining salsa verde.
