    Prediabetes rates have been rising and there’s so much confusion and stigma associated with the diagnosis. Today we’re talking with dietitian friend Alice Figueroa about what prediabetes is and the importance of a compassionate and individualized approach to treatment. Alice recently authored Prediabetes Diet and Action Plan and is passionate about promoting universal access to nutrition support, health services, and wholesome foods for all segments of society.

    She is an award winning Natural Foods Chef recognized with a James Beard Foundation National Scholar Award.  Alice holds an honors degree in International Relations with a focus on healthcare policy from Tulane University. Throughout her career, she has conducted health research and developed bilingual nutrition education programs for underserved communities in Guatemala, South Africa, Brooklyn, Harlem, and the Bronx.

    Pickled Onions

    Pickled onions just make everything better, amirite?! They help to awaken even the most basic meals and I love adding them to sandwiches, quesadillas, tostadas and egg scrambles. Below is my recipe for an incredibly easy and quick way to pickle onions! Also, those soft-boiled eggs are a perfect 6 minute boil. Xoxo

    Pickled Red Onions
    Ingredients
    • 1 small onion thinly sliced
    • 3/4 cup apple cider vinegar
    • 1/2 cup water
    • 1/2 teaspoon each of salt
    • 1/2 tablespoon of sugar
    Instructions
    1. Pack the onions into a medium sized glass jar.
    2. In a small pot, add the vinegar, water, salt, and sugar, and bring to a boil.
    3. Add the hot water/vinegar mix to the jar with the onions, so that all onions are covered. If you need a little more liquid, you can top with hot water.
    4. Place the lid on tightly, let the jar cool, and leave in the fridge overnight.

    You can store for up to 2 weeks! My jar is empty within days. Enjoy!

    Public Health Has a Weight Problem w/ Mikey Mercedes

    This week we have one of our favorite guests BACK on the podcast talking about the many ways fatphobia shows up in public health initiatives. Marquisele Mercedes is a doctoral student and writer from the Bronx and her doctoral training and interests are at the intersection of fat studies and scholarship on race/ism. She looks at how racism, anti-Blackness, and fatphobia shape health care, research, and public health work and training.

    Marquisele Mercedes (she/her) is a doctoral student and writer from the Bronx, New York who is currently based in Providence, Rhode Island. As a Presidential Fellow at the Brown University School of Public Health, her doctoral training and interests are at the intersection of fat studies and scholarship on race/ism. She is broadly interested in how racism, anti-Blackness, and fatphobia shape health care, research, and public health work and training. Marquisele is part of the Future of NAAFA Committee for the National Association to Advance Fat Acceptance and writes about fat politics and the health industrial complex on Medium in her spare time. A humanist at heart with a degree in English, Marquisele is finding her way as a fat liberationist in the making one word at a time.
