    3 Fall Juices

    The fall is officially here, and we’re bringing you these 3 fall juices, to keep you hydrated and healthy during these cooler months. Generally, I prefer smoothies and I think it’s safe to say most dietitians do as well. They have more fiber, which helps keep you full for longer. However, as much as I love my smoothies, I’m not too crazy about them in the fall and winter months. 

    I prefer something more soothing and warm or room temp, so I tend to lean towards juicing as the seasons change. 

    The juices we created have seasonal ingredients like carrots, apple, and ginger. Ginger in particular, is great during the cooler months, since it adds a touch of heat to recipes. Ginger can also stimulate powerful health benefits in the body. It adds a wonderful flavor that is both sweet and spicy. 

    Now for the recipes…on the menu we have Spicy Carrot, Sweet Beet, and Citrus Green. Start by washing all of your produce.

    For the spicy carrot, cut the carrot and ginger into smaller pieces that will fit through the juicer chute. Discard the apple core and seeds, and then juice all of the ingredients. For the sweet beet, cut the beet and pear into smaller pieces that will fit through the juicer chute. Juice just the beet and pear, and then finish with a squeeze of lime juice. And lastly for the citrus green, chop the kale + stems, and cut the cucumber into pieces that will fit through the juicer chute. Peel the orange, cut as well, and put all of the ingredients through the juicer.

    Each recipe yields 1 serving.

    3 Fall Juices

    1 serving per juice

    Ingredients
    SPICY CARROT
    • 3 medium carrots
    • 1 medium apple
    • 3 " piece of ginger
    SWEET BEET
    • 1 medium beet
    • 1 medium pear
    • Juice of 1/2 lime
    CITRUS GREEN
    • 1 cup kale + stems
    • 1 small cucumber
    • 1 medium orange
    Instructions
    1. Start by washing all of your produce.
    SPICY CARROT

    SWEET BEET
    1. Cut the beet and pear into smaller pieces that will fit through the juicer chute

    CITRUS GREEN

    Crispy on the outside, oozy on the inside, we are Crispy on the outside, oozy on the inside, we are using @cabotcheese seriously sharp cheddar to make these bolitas de yuca for your superbowl turn up! A mouthwatering Dominican appetizer made with my favorite root vegetable, these bolitas feed a crowd and pair perfectly with Cabot cheddar, which is naturally aged and 100% lactose free. Ingredients 
🧀 1 pound yuca, peeled and chopped into small chunks 
Salt
🧀1 tablespoon butter 
🧀1/2 jalapeño, seeded and finely chopped 
🧀1/4 teaspoon of garlic
🧀1/4 teaspoon of paprika 
🧀4 ounces of Cabot Seriously Sharp Cheddar Cheese, cut into small 1/2” chunks 

Directions:
🧀Preheat the oven to 450F.
🧀Bring a medium pot of salted water to boil and add the yuca. Boil for 30 minutes or until tender. Drain the yuca, remove all of the fibrous stems and add to a medium sized bowl. 
🧀Mash the yuca well with butter, jalapeño and spices until completely smooth. Adjust for salt and set aside until cooled. 
🧀Grab about 1 1/2 tablespoons of the yuca mix, put the cheddar cheese in the center and roll it up into a ball. Repeat for the remaining yuca and cheese. 
🧀Add the yuca balls onto a parchment paper lined baking sheet OR air fryer and spray with oil. Bake for 25 minutes (or air fry for 10-12 minutes) until crispy and browned on the outside. Enjoy on their own or with your favorite sauce! 

TIPS: 
👉🏽If the balls are extra sticky, wash and dry your hands throughout the rolling process - this will help. 
👉🏽If your yuca mash is bulky, add a little bit of water while mashing to make it smoother.
