In honor of Black History Month, Wendy and Jess remake some of our favorite soul food dishes into mouthwatering healthier options. Watch as they put their spin on Jerk Chicken (Jerk Tofu), Mashed Potatoes (Cilantro and Lime Sweet Potato Mash), Mac and Cheese (Butternut Squash Mac) and Collards (sans the Ham hocks).

i’m allergic to soy, so i can’t eat tofu, what other non-meat product can i use for the jerk “chicken”?

Hey there Tai! I would suggest marinating some portabella mushrooms in jerk sauce and grilling them. They have a meaty texture and absorb all those flavorful juices. Hope this helps!

my pictures aren’t cooperating with me at the moment, but i made the butternut squash mac and cheese as well as the jerk marinade (but i did use chicken. just not a tofu person so much. but it was free range, vegetarian diet fed chicken). anyway, SO GOOD!!!! i never would have thought to combine these ingredients. i’ve never had mac and cheese made this way and i have to say that i was a little scared that i wouldn’t like it but this was great!!!! so excited to try making the collards tomorrow as well as trying other recipes. keep shining and thanks for sharing!!!
