    Curry Roasted Potato Breakfast Bowl

    A few months ago, we did a poll asking what recipes you wanted to see more of. There was a resounding amount of people asking for savory breakfast recipes, and so I’m getting to work (gotta give the people what they want, ya know?) I’m assuming people are tired of the typical oatmeal, smoothies, and eggs, and want to switch it up. I totally feel that.

    Potatoes are one of my favorite foods, and my friends will tell you, I’m a potato making master. Whenever I’m in the mood for a slower morning, usually on weekends, I’ll make a more involved breakfast like this one. It’s comforting and packed with flavor and nutrition. 

    For this recipe, we’re going to create a curry coating for the potatoes using Thrive Algae Oil. If you’ve never heard of a culinary algae oil, it has some impressive culinary and nutrition benefits. Made of 90% heart-healthy monounsaturated fats, using Thrive is a simple swap that can replace sources of saturated fat, like butter and traditional cooking oils, to help maintain heart health. And don’t worry about any unwanted flavor – Thrive is completely neutral! It also has a high smoke point (up to 485°F degrees), which means it doesn’t burn at high temperatures. This makes a big difference when you’re frying, searing, sautéing, and roasting – like for these potatoes! It’s also great for frying the eggs to top off these breakfast bowls.

    Ready to get started? Preheat the oven to 425F. Add the Thrive algae oil, garlic, vinegar, nutritional yeast, salt, and cayenne pepper to a food processor. Pulse until you get a thick marinade. Line a baking sheet with parchment paper, add your potato chunks, and pour the marinade over the potatoes. Massage in until all potatoes are coated.

    Pop into the oven for 40-45 minutes, or until potatoes are crisp and thoroughly cooked. To make the avocado sauce, add all ingredients to a food processor and pulse until smooth and consistent. Salt to taste. Once the potatoes are ready, let’s assemble our bowls! Add the potatoes, beans, fried egg, and toppings to each bowl. Drizzle the avocado sauce over the bowl and enjoy! If you’re only having one bowl now, save the leftovers and reheat and assemble for another day!

    Servings: 2
    Ingredients
    For the potatoes:
    • 1/4 cup Thrive algae oil
    • 2 cloves of garlic
    • 1 teaspoon white vinegar
    • 1/2 teaspoon curry powder
    • 2 tablespoons nutritional yeast
    • 1/4 teaspoon salt
    • Pinch of cayenne pepper
    • 2 large red potatoes chopped into 1" chunks with skin on
    To assemble the bowl:
    • 1/2 cup of cooked black beans
    • Fried eggs
    • Cilantro, pickled onions, salt to taste
    Avocado sauce:
    • 1/2 avocado
    • 1/4 cup cilantro
    • 1 jalapeno deseeded
    • Juice of 1 lime
    • 1/2 cup water
    • Salt to taste
    Instructions
    1. Preheat the oven to 425F.
    2. Add the Thrive algae oil, garlic, vinegar, nutritional yeast, salt, and cayenne pepper to a food processor. Pulse until you get a thick marinade.

      This recipe was delicious. I highly recommend it. I haven’t really jumped on the avocado bandwagon; I almost skipped the avocado sauce, but I went ahead and made it. It was really good. Don’t skip the sauce!
