Whisk together the sesame seed oil, soy sauce, maple syrup and curry. Add the slice of tofu to a small bowl, and drizzle the whisked ingredients over. Let marinate for a few hours or overnight.⠀
When tofu is done marinating, heat a small lightly oiled non-stick pan. Add the tofu and cook over medium heat for 1-2 minutes on each side, until golden brown and edges are crisp. Set aside when done.⠀
To assemble sandwich, spread the mayo on the toast, then mashed avocado, then add tofu, and top with red onion and tomato. Top with other slice of toast. Enjoy!
