Preheat the oven to 425F

Cut the carrots and parsnips into french fry looking pieces, approximately 1/2" wide, 4" long

Throw them into a large bowl and in a smaller bowl, mix together the olive oil, maple syrup, curry & garlic

Add this sauce into the larger bowl and massage it into the carrots and parsnips, so that all pieces are coated

Add the coated carrots and parsnips to a baking sheet, and bake for 15 minutes

Using a spatula, flip over and bake for another 10 minutes or until crisp

While that's happening, let's make our avocado sauce. In a blender or food processor, add all ingredients for the sauce except for the salt

Blend until smooth and add salt, to taste

Once the fries are done baking, enjoy with the avocado dipping sauce!
