Ingredients
For the tofu:
  • Extra firm tofu, pressed (sliced into 3/4" slices, will only use 1 slice)⠀
  • 1/2 tbsp sesame seed oil⠀
  • 2 tsp soy sauce
  • 2 tsp maple syrup⠀
  • 1/4 tsp curry powder⠀⠀
For the sandwich:
  • 2 slices of toasted bread⠀
  • Mayo for spreading⠀
  • 1/2 haas avocado, smashed with a pinch of salt and lemon juice⠀
  • 1 Sliced red onion
  • 1 Sliced tomato
Instructions
  1. Whisk together the sesame seed oil, soy sauce, maple syrup and curry. Add the slice of tofu to a small bowl, and drizzle the whisked ingredients over. Let marinate for a few hours or overnight.⠀

  2. When tofu is done marinating, heat a small lightly oiled non-stick pan. Add the tofu and cook over medium heat for 1-2 minutes on each side, until golden brown and edges are crisp. Set aside when done.⠀

  3. To assemble sandwich, spread the mayo on the toast, then mashed avocado, then add tofu, and top with red onion and tomato. Top with other slice of toast. Enjoy!
