Crispy Stovetop Potato Rounds

Ingredients
  • 5 small potatoes sliced into 1/4" rounds (leave skin on)
  • 2 tablespoons olive oil
  • Salt and cracked pepper to taste
Instructions
  1. In a large pan, heat the olive oil, and once hot, add the potato rounds
  2. Try to spread them out onto the pan so they all touch the surface
  3. Cook over medium heat for 3-4 minutes or until golden, then flip with a spatula, and repeat on the other side
  4. Once both sides are golden, place a lid on, lower the flame to low-medium, and cook for 5 minutes
  5. Flip again, and cook another 5 minutes with the lid on
  6. Now remove the lid, and cook for the last 5 minutes until golden, and fully cooked.
  7. Add salt & cracked pepper to taste, and enjoy with your favorite dip!
