Throw the 2 of the peeled peaches into the freezer for a couple hours, and leave 2 peaches aside for the popsicle molds.

Alternatively, you can purchase frozen peaches and use that instead for this part.

Once the peaches are frozen, add them to a blender, along with the coconut cream, maple syrup, and almond milk.

Blend until smooth and creamy and set aside.

Now for those 2 peaches you set aside...slice those into 1/2" wedges and distribute them evenly into 7 popsicle molds.

Then add in the creamy peach blend.

Pop any visible air bubbles, adjust the cover, and pop in those popsicle sticks.

Freeze overnight. When ready, leave out for 4-5 minutes so the popsicles can loosen from the molds.

You can also run room temperature water over the molds for a couple of minutes to help loosen the popsicles up.

That's it! Enjoy now, and save the rest for later. I like to keep them right in the mold until I'm ready to enjoy again.
