Hearty Chipotle Spinach Frittata

Ingredients
  • 1/4 cup tomato sauce
  • 2 chipotle peppers in adobo sauce
  • 6 eggs
  • 1 tablespoon olive oil
  • 1/2 medium onion chopped
  • 1 portabella mushroom chopped
  • 3 cups spinach chopped
  • Salt & pepper to taste
  • Fresh herbs we used curly parsley
Instructions
  1. Start by blending the tomato sauce + chipotle peppers. Set aside
  2. Also beat the eggs in a bowl and set aside
  3. Heat your olive oil on a skillet, and add the onions and mushrooms
  4. Sauté for 5 minutes over low heat, with the lid on
  5. Then add 3 cups of spinach, and sauté for another 4-5 minutes
  6. Add the eggs and chipotle tomato sauce into the skillet and mix well together
  7. Lightly scramble within the skillet every 3-4 minutes, until most of the eggs are cooked. They should be good to go in around 10-15 minutes
  8. Once that's done, pop into the broiler for 3-5 minutes. Keep an eye on the frittata so it doesn't burn!
  9. Once the top and edges are firm and browned, remove and top with salt and pepper to taste
  10. Garnish with your favorite herbs! We used curly parsley. Enjoy!
