Cocoa Date Balls
Ingredients
  • 1 cup of pitted dates
  • 1/4 cup of unsweetened cocoa powder
  • 1/4 cup of unsweetened coconut flakes
  • 1/4 cup of pecans
  • 2 ounces of dark chocolate
Instructions
  1. Soak pitted dates in a bowl filled with water for at least 1 hour
  2. Drain the water out, and add the soaked dates and pecans to a food processor or blender
  3. Blend until you get a consistent chunky paste (don't over-blend! a couple of pulses should be good)
  4. Remove the pecan date mix, and scoop into a bowl
  5. With your hands, mold the small date balls- this mix should yield 9-10 servings (1 serving=1 ball)
  6. Pour the 1/4 cup of cocoa powder into a bowl, and dip each ball into the bowl and rotate so it's covered evenly with cocoa
  7. As you finish, place the date balls on a dish or large plate
  8. Top the cocoa balls with coconut flakes (mold them in with your hands)
  9. Lastly, in a small pot, melt 2 ounces of dark chocolate under low heat
  10. Once fully melted, drizzle on top of the date balls
  11. Place in the refrigerator for at least 1 hour so the balls can stiffen and the chocolate can harden
  12. Enjoy!
