Soak pitted dates in a bowl filled with water for at least 1 hour

Drain the water out, and add the soaked dates and pecans to a food processor or blender

Blend until you get a consistent chunky paste (don't over-blend! a couple of pulses should be good)

Remove the pecan date mix, and scoop into a bowl

With your hands, mold the small date balls- this mix should yield 9-10 servings (1 serving=1 ball)

Pour the 1/4 cup of cocoa powder into a bowl, and dip each ball into the bowl and rotate so it's covered evenly with cocoa

As you finish, place the date balls on a dish or large plate

Top the cocoa balls with coconut flakes (mold them in with your hands)

Lastly, in a small pot, melt 2 ounces of dark chocolate under low heat

Once fully melted, drizzle on top of the date balls

Place in the refrigerator for at least 1 hour so the balls can stiffen and the chocolate can harden
