Black Bean Quinoa Chili

Ingredients

cups
of cooked black beans

cup
of cooked quinoa*
1
cup
of tomato sauce
2
medium tomatoes,
cubed
1
jalapeno,
de-seeded & chopped
3
garlic cloves,
minced
¼
cup
scallions,
chopped
½
red bell pepper,
chopped
½
green bell pepper,
chopped
2
tablespoons
of olive oil
1
tablespoon
of cumin
Salt and cayenne pepper to taste
Instructions
In a pot, heat 2 tablespoons of olive oil and add chopped peppers, scallions, garlic, tomatoes, and 1 tablespoon of cumin. Cook for 5 minutes.
Then add 1 cup of tomato sauce, 3 cups of black beans, and 1 cup of cooked quinoa. Cook for 15 minutes under low-medium heat.
Add salt and cayenne pepper to taste!
