Spinach Sunrise Salad

  • 4 cups of baby spinach
  • 1/2 medium carrot
  • 1/2 cucumber
  • 1/4 cup of tomatoes
  • 3 tablespoons of sun dried tomatoes
  • 2 cloves of garlic
  1. Grate carrot, and chop cucumber and tomatoes
  2. If you have a garlic press, use it to crush garlic. If you don’t have one, mince garlic with a knife.
  3. In a bowl, combine all of these ingredients with the baby spinach.
