Start by blending the tomato sauce + chipotle peppers. Set aside

Also beat the eggs in a bowl and set aside

Heat your olive oil on a skillet, and add the onions and mushrooms

Sauté for 5 minutes over low heat, with the lid on

Then add 3 cups of spinach, and sauté for another 4-5 minutes

Add the eggs and chipotle tomato sauce into the skillet and mix well together

Lightly scramble within the skillet every 3-4 minutes, until most of the eggs are cooked. They should be good to go in around 10-15 minutes

Once that's done, pop into the broiler for 3-5 minutes. Keep an eye on the frittata so it doesn't burn!

Once the top and edges are firm and browned, remove and top with salt and pepper to taste

Garnish with your favorite herbs! We used curly parsley. Enjoy!
