Cozy Turmeric Black Eyed Pea Stew

Ingredients
  • 1 tablespoon olive oil
  • 1/2 onion chopped
  • 4 cloves garlic minced
  • 1 tablespoon ground turmeric
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 cup tomato sauce
  • 1 cup water
  • 2 cups black eyed peas cooked
  • 1 chipotle pepper in adobo sauce
  • Optional: Fresh cilantro
Instructions
  1. Start by heating the oil in a medium pot or pan, and add the onions and garlic
  2. Sauté until fragrant and then add the turmeric, paprika, and cumin
  3. Sauté all ingredients together for 1-2 minutes over low heat
  4. Add the tomato sauce, water, and black eyed peas and stir together. Cook for 5 minutes
  5. Scoop out 1 cup of the stew, add it to a blender or food processor with the chipotle pepper, and blend until you have a consistent puree
  6. Add it back to the pot, stir in well, and cook for another 7-10 minutes over low heat
  7. Top with fresh cilantro and turmeric. Enjoy with your favorite whole grain!
