Soyrizo Kale Taco Salad

Ingredients
  • 3 cups of tuscan kale chopped
  • 1 large tomato chopped
  • 1/4 cup medium onion chopped
  • 1 cup black beans cooked
  • 1/2 cup cilantro chopped
  • 1/2 jalapeño deseeded & chopped
  • Juice 1/2 lime
  • 1 tablespoon olive oil
  • 1 avocado sliced
  • 1/2 cup salsa
  • 1/2 cup soyrizo
  • Salt to taste
  • 3-4 to stada shells
Instructions
  1. Add the kale, tomato, onion, beans, cilantro, jalapeño, lime juice, and olive oil to a large bowl.
  2. Toss together, and top with avocado, soyrizo, and salsa. Salt, to taste, and enjoy with tostada shells!
