Vegan Huevos Rancheros
Ingredients
Ingredients
  • 1 package of extra firm tofu
  • 1 to mato
  • 1 bunch of cilantro
  • 1/2 onion
  • 3 cloves of garlic
  • 2 tablespoon of olive oil
  • Juice of 1/2 lime
  • 1 can of black beans
  • 2 tablespoons of cumin
  • 2 tablespoons of chili powder
  • 2 tablespoons of garlic powder
  • 1 tablespoon of curry powder
  • Salt and pepper to taste
Instructions
To make beans
  1. Saute 2 tablespoons of chopped onion and 1 clove of chopped garlic in 1 tablespoon of olive oil on medium heat
  2. Add can of beans + 1 tablespoon of cumin, 1 tablespoon of chili powder + 1 tablespoon of garlic powder
  3. Cook for 5 minutes
To make Tofu scramble
  1. Crumble tofu with your hands or a fork until it resembles the consistency of scrambled eggs
  2. Saute 2 tablespoons of onions with 1 clove of garlic in 1 tablespoon of olive oil on medium heat
  3. Add 1 tablespoon of cumin, 1 tablespoon of chili powder, 1 tablespoon of curry powder and 1 tablespoon of garlic powder
  4. Add tofu, stir and cook for about 5 minutes
  5. Cover, reduce heat and simmer for another 5 minutes
To make Salsa topping
  1. Chop tomato, 1 clove of garlic, 1-2 tablespoons of onions 3 tablespoons of cilantro
  2. Mix everything together
  3. Cook mixture on a low heat for a few minutes until tomatoes are juicy
  4. Top with fresh squeezed lime
  5. Top with salt and pepper to taste
  6. Enjoy with sliced avocado and/or tortillas!
