5-Minute Kale Taco Salad

Ingredients
  • 3 cups of kale
  • 1/4 red bell pepper, thinly sliced
  • 1/4 cup cooked pinto beans
  • 1/5 cup of chopped cherry tomatoes
  • 2 tablespoons of olives, sliced
  • 1 jalapeno, deseeded and chopped
  • Handful of tortilla chips
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Instructions
  1. Chop kale into small pieces
  2. Massage with olive oil and a little bit of salt and pepper
  3. Mix all of the other ingredients together and enjoy!

Optional: Top with shredded cheddar cheese
