Quick Power Breakfast


How does a Quick Power Breakfast sound to fire up your morning? This one is so simple, it doesn’t even need a recipe! The versatility and simplicity will make this one of your go-to breakfasts.

I am sure that many of you have heard the saying that breakfast is the most important meal of the day.  While every meal that we eat is important, consuming breakfast helps to get our day off to the right start.  When we go all night without eating, we need something to energize our bodies to begin our day.  Many times, when we make healthy choices for breakfast we are more likely to make healthy choices throughout the rest of the day as well.  Studies have shown that people who eat breakfast have a healthier weight, better focus, and have less risk of many chronic diseases, especially if you have a quick power breakfast like this!  

The whole grains in this recipe will also help to kick start your day. Americans tend to get plenty of grains, but we are lacking in whole grains.  Many processing techniques remove the germ and the bran of the grain that contain those essential minerals that our bodies need to function.  This recipe uses whole wheat bread which can help increase your iron intake as well as a great source of fiber and B vitamins, while providing that healthy dose of fiber too!

This recipe is super easy. Just toast a piece of whole wheat bread, spread with low fat ricotta cheese and add your favorite sliced fruit on top. Drizzle with a tiny bit of honey and sprinkle with cinnamon for flavor. You can also top with tomatoes instead of fruit and drizzle with a tiny bit of olive oil. Add fresh cracked salt and pepper to taste.

    I just stumbled across your podcast and on to your site! I make this toast using cashew cheese with garlic & parsley. I add tomatoes, parsley, and a drizzle of olive oil & lemon juice. You just gave me the idea to make a plain cashew cheese another way to incorporate fruit into my diet! Thanks ladies!!!
