Herbs might be one of the most magical foods you can have in your kitchen. We always end up buying a whole bunch of a particular herb and try to get creative with all the extra that we have. These recipes focus on herbs so that you can use up that arsenal you have.
Herbs are often known for adding a huge kick of flavor and also add some medicinal properties. They are also known for their antioxidant properties, which can help fight off chronic diseases by fighting free radicals. Free radical damage has been linked to various cancers, aging, and a variety of diseases. Common herbs are parsley, basil, oregano, rosemary, thyme, cilantro, caraway, chives, dill, fennel, and the list goes on and on and on. Herbs are great too because you can easily grow your own and they are also super simple to freeze and use in cooking later.
The first recipe is a Spinach and White Bean Pasta. All you need to do is blend all of your ingredients up in a blender or a food processor. Douse a batch of whole wheat pasta with the sauce and enjoy!
The next recipe are some fun homemade tortilla chips and some homemade dips to pair them with! The tortilla chips are super easy by flavoring with your favorite spices and baking the tortillas for only about five minutes. The pesto is just a combo of basil, garlic, almonds, olive oil, salt and water. Super simple. Just blend it all together in a food processor or blender and viola. The olive dip is just as simple. Blend together the parsley, olives, and olive oil and enjoy.

- 4 cups chopped spinach
- 1 can of small white beans low sodium
- 1 tablesppon oregano
- Juice from one lemon
- 2 cloves of garlic
- Salt and pepper to taste
Blend it all together in a blender or food processor!
- Tortilla Chips
- Your favorite spices examples: oregano, chili powder, whatever you like
- 6 to 10 corn tortillas
- 1-2 tablespoons of olive oil
- Vegan Pesto
- 2 cups of fresh basil
- 3-5 cloves of garlic
- 1/4 cup of almonds
- 1/4 cup of olive oil
- 1 cup of water
- 1 teaspoon of salt
- Olive Dip
- 1 teaspoon fresh parsley
- 1 cup of Spanish olives
- 1/4 cup of olive oil
Pre-heat oven @ 375
Cut tortillas into 6 small triangles
Use brush to paint each tortilla with a tiny bit of oil on each side
Add your favorite spice
Bake chips for about 3 to 5 minutes or until they look crispy
Peel your garlic
Put all ingredients into blender.
If you see that things aren’t blending quite smoothly, get in there with a spoon and stir.
Keep blending until you have desired texture.(If you want a more liquidy texture, just keep adding more water and blend.)
