Fall is coming up, which means that these Grilled Sweet Potato Slices should be right up there on your radar while sweet potatoes are at peak season. Along with all other types of fall produce like apples, broccoli, Brussel’s Sprouts, and a whole array of winter squash. But I would have to say that sweet potatoes are by far our favorite for many other reasons. They can be incorporated into soups, salads, desserts, and more. Sweet potatoes contain a monstrous amount of nutrients in just one serving. They are jam packed with vitamin A and vitamin C to make sure you’re getting in those vital antioxidants. Sweet potatoes also contain plenty of fiber as well to keep your system running smoothly. Fiber helps to keep us satiated, and promotes healthy gut function. It’s also been shown to decrease your risk for many chronic health conditions- including diabetes, heart disease, and colon cancer. The best part is that they are totally delicious too.
How easy are these? All we are going to do is begin by peeling two sweet potatoes. Heat a cast iron grill on medium heat and spray with a non-stick spray. Cut the sweet potatoes in long, thin slices. Lay them flat on the grill and cook each side for about five minutes each or until you see grill marks. Sprinkle with garlic powder, salt, and pepper while they are cooking.
Finally, garnish each with your favorite herbs or whatever you have on hand. I used cilantro because I had some in my kitchen, but you could use rosemary, basil, thyme, parsley, or any other herbs you have around! How about tossing in some sage for a fall themed app? - 2 sweet potatoes
- 1 tablespoon of cilantro
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Peel sweet potatoes
Heat cast iron grill on medium heat; spray with non-stick spray.
Cut sweet potatoes in long, thin slices
Lay flat on grill and cook on each side for about 5 minutes (or until you see grill marks)
Sprinkle with garlic powder and salt and pepper as the sweet potatoes cook
Lastly garnish with your favorite herb (I used cilantro)
For this recipe, you will need a Cast iron Grill (or a regular grill works too) and non-stick spray
