Crunchy Cauliflower Bites

Crunchy Cauliflower Bites
Ingredients
  • 1 Small head cauliflower
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup Cornmeal
  • 1 tsp Ground Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1 Egg
  • 1 tbsp Coconut Oil
  • 1 tbsp Maple Syrup
  • 1 tbsp Soy Sauce
  • 1 tbsp Chili Paste or Sambal Oelek Paste
For the cheese sauce:
  • 1/4 cup butter (plant-based works)
  • 1 cup soy milk
  • 1/2 tbsp corn starch⠀
  • 1 tbsp nutritional yeast⠀
  • 1/2 tsp salt
  • pinch cayenne pepper
  • 3.5 ounces cheddar cheese, shredded or diced
Instructions
  1. Preheat the oven to 400F⠀

  2. Chop the cauliflower into 1 1/2” florets⠀

  3. In a small bowl, mix together the dry ingredients (breadcrumbs, cornmeal, & spices)⠀

  4. In another bowl, beat together the wet ingredients well (egg, oil, maple syrup, soy sauce, & chili paste)⠀

  5. Line a baking sheet with parchment paper. Dip each cauliflower floret into the wet mix, and then into the dry mix, and place onto the baking sheet. Repeat until all of the cauliflower is coated.

  6. Bake the cauliflower for 30 minutes, flipping halfway. While that’s baking, let’s make the cheese sauce!⠀

  7. In a small saucepan, melt the butter, and then add the soy milk. Slowly whisk in the corn starch, until fully mixed in.⠀

  8. Add in the nutritional yeast, paprika, salt, and cayenne pepper and cook for another minute.⠀

  9. Then add in the cheese, and continue cooking over low heat (~5 minutes) until the cheese sauce is thick and melted. Whisk frequently while cooking.⠀

  10. Enjoy with the crispy cauliflower!
