Creamy Vegan Alfredo

Sometimes we all just need a big, comforting bowl of creamy pasta. It tastes great in the moment, but often leaves a ‘bleh’ feeling shortly after. We’re bringing you the best of both worlds with this Creamy Vegan Alfredo! It’s perfectly creamy, and comes without the GI upset and heaviness that many thick, creamy pastas bring.

Cashews are one of our favorite nuts because they’re so flexible in the kitchen, especially when trying to create creamy textures. They contain potassium, magnesium, and iron. This recipe is a great way to get more plant-based foods into your meals. By replacing heavy cream with this cashew-based alfredo sauce, you’ll be getting loads of heart-healthy fats into your meals. You’ll want to make sure to soak those cashews for a couple hours to get that creamy consistency.  

We’re also adding cooked cauliflower to the mix. Cauliflower has a fairly bland flavor, making it a great base and substitution for your favorite recipes (like this cauliflower pizza crust). Welp, we’re adding it to this Creamy Vegan Alfredo too!

Now that we’re done drooling, let’s get to prepping. Begin by adding all of the ingredients for the sauce (except the salt) into a blender or food processor and blend until smooth. Add salt, to taste. (You may have to add more or less, depending on how salty your vegetable broth is) and set aside.

Cook the 8 oz. of pasta as per package instructions.  Once cooked, remove from the stove, drain the water, and add the pasta back to the pot. Turn the heat to low, add the sauce and leafy greens, and stir to mix everything together. Cook for 3-4 minutes over medium heat, stirring occasionally, and finish off with a drizzle of olive oil, pepper, and salt, to taste. Pair with your favorite protein, for a satiating meal! If you’re a cheese lover like myself, you can also top with some parmesan!

You can use your favorite pasta with this sauce! We used an 8 oz. box of rigatoni, and cooked it al dente. If you like your pasta soft, cook a bit longer. Note that if you’re using a larger box of pasta, you’re going to need more sauce. Pro tip: when reheating the sauce, add some water to the pot or dish to moisten up the pasta and sauce again!

For the sauce
  1. 1/3 cup cashews, soaked in water for 1-2 hrs & drained
  2. 2 cups cauliflower florets, steamed or boiled for 10 min, until soft
  3. 1/2 cup unsweetened nut or soy milk
  4. 3/4 cup vegetable broth
  5. 1/2 teaspoon garlic powder
  6. 1 tablespoon nutritional yeast
For the pasta

  4. Red pepper flakes, black pepper, salt, to taste

    I actually tried this one out with the rigatoni pasta and everything and it tasted (suprisingly) A-MA-ZING. I used normal milk tho (all those special milks are pretty expensive and Im broke lol)

      Claire, where do you live? Most nut milks are nearly as affordable as regular milk sometimes more affordable. I can suggest some places if you tell me what town you live in. <3
