This Brown Rice Salsa Salad is inspired by a salad Jess and I purchased while in Nashville for FNCE at The Post East. It was so colorful and hearty, and I never thought to incorporate brown rice into a salad. Technically, salad is just a combination of any ingredients so rice totally works! Who would have thought?! I added my own twist, and made a huge bowl for the family (they loved it!).
This salad is a great source of complete protein with the black bean and brown rice combo. The bell peppers add a kick of vitamin C and the kale offers a host of vitamins like vitamin K, A, and C, and is a great source of folate, B vitamins, copper, manganese, and fiber. So this salad is absolutely loaded with nutrients and terribly simple to make!
Take your brown rice, cooked black beans, bell peppers (any colors! Have some fun with it!), corn, chopped raw kale, tomato sauce, red onion, and cayenne and combine in a large bowl. Viola! You’re already done.
This recipe is an excellent dish to make before you go to work for a healthy afternoon lunch or also works perfectly as a large side dish for that party you have to go to. Feel free to switch it up and add some spices for an added kick. Throw in some cilantro leaves or even garnish with slices of avocado. Anything works! - 2 cups of cooked brown rice, as per package instructions
- 1 cup of cooked black beans
- 2 small bell peppers, chopped (switch up the colors for a color pop!)
- 1/2 cup of corn
- 1/2 cup of raw kale, finely chopped
- 1/2 cup of tomato sauce
- 1/4 red onion, chopped
- 1 teaspoon of cayenne pepper
- Combine all ingredients in a bowl, and mix. Enjoy!
