Avocado Pesto Grilled Cheese

I love grilled cheese and avocado and pesto, so this Avocado Pesto Grilled Cheese is the perfect combo! I love grilled cheese because of how easy it is to prepare, and how personalized you can make it out to be. This is one of my go-to’s when coming home after a long day. I throw whatever vegetables I have in the fridge on some bread with my favorite cheese, and 5 minutes later a tasty grilled cheese is born. This recipe is super simple, and the pesto really brings out the flavors of the other ingredients.


Avocados have tons of healthy fats and potassium and may even help lower cholesterol levels.  They bring so much flavor to anything you add them to.  The high fat content (keeping in mind they are healthy fats!) helps keep you full for hours.  Plus, the whole wheat bread gives you the fiber, B vitamins, iron, zinc, and copper your body needs.  A diet rich in whole wheat has also been shown to reduce the risk of heart disease, type 2 diabetes, and obesity.  Grilled cheese may not appear to be a healthy option at first, but dress it up with healthy ingredients like avocados and you’ve got yourself a well-balanced meal.  Pair this with a side of veggies for additional nutrients and a more complete meal. Choose whole grain bread to incorporate more fiber and reduce the risk of obesity, type 2 diabetes, and heart disease.

Start off by spreading the pesto on each slice of toast.  Layer the bread with mozzarella cheese, spinach, and avocado.  Grill this up for about 5-7 minutes.  You can also use a stovetop and cook the sandwich on each side with the lid on for 3-4 minutes.  How do you like to dress up your grilled cheese?   • 2 slices of 100% whole grain bread
  • 1/4 cup of raw spinach
  • 1/8 hass avocado
  • 1 ounce of mozzarella cheese
  • 1 tablespoon of pesto
  1. Spread the pesto on each slice of toast
  2. Layer with cheese, spinach, and avocado
  3. Grill for 5-7 minutes OR if using the stovetop, cook sandwich on each side with the lid on for 3-4 minutes. Enjoy!
